Okay- I know how weird "squash noodles" sound, but if your family is anything like mine, you have at least one stickler who does not like eating their veggies.
In my family, unfortunately, there are two... my hubby and my Raegan.
Yes! I somehow was miraculously blessed with one child who actually LOVES trying new things!
Anyway- my sister told me about some squash and zucchini noodles she loved to order at the "Pizza Factory" restaurants. I assumed they were just noodles of different colors like you sometimes see, but NO!!
They are actually strips of veggies cut into the shapes of noodles with pasta sauce on top!
Sounds crazy, but it is actually REALLY good!!!
Naturally- I had to try making some!
I knew my kids might not be fooled into eating "green noodles" so I opted not to use zucchini, but just the yellow squash.
I peeled the skins from several squash (squash? squashes? squashi?)
sliced into fettucine-type pieces,
sauteed for a few minutes with no-stick cooking spray (until al dente)
seasoned with a little salt and pepper
tossed with some alfredo
threw some chicken on top
& VOILA!
Kairi ate hers all up in about 2 minutes and then asked if she could finish Raegan's too! hahah!
All in all, it was a big hit and I tricked my kids, and my hubby, into eating a healthy serving of vegetables!
